Thai Style Green Chicken Curry

I made this dish for this past Sunday (Oct 27 2013) dinner.  As you all can see, during the weekend my hubby and I love to stay home, just kick back relax watch some movies and drink some wine. 
This green curry mixture, I bought it while I was on vacation in Thailand two weeks ago.  This green curry brand is called “The Blue Elephant” and I think this is the best green curry mixture I have ever tried.  Anyway here’s how you make this dish….



Ingredient

1/2 Fresh Chicken
Green Egg Plant
String Green Beans
Onion
Chili Pepper
Thai Basil
Shallot

Seasoning For the Chicken

Soy Sauce
Fish Sauce
White Pepper

Seasoning For the Curry

Blue Elephant Green Curry
Fish Sauce
Sugar
Coconut Milk

Method

1.      Chop the chicken into big pieces, wash it, pat it dry and season it with some soy sauce, fish sauce and a little white pepper.  Marinate the chicken for 30 mins.
2.      In a large skillet with high side, heat up one tablespoon of oil; add in the green curry paste cook for a min.
3.      Add in the onion, chili pepper and shallot, cook for a 1min, then add in the chicken, cook for 1-2mins then add in the coconut milk and cook for 10-15 mins
4.      Add in the green egg plant cook for 1-2min, then add in the string beans cook for another 2-3mins
5.      Check the taste, if it is too spicy adds in a littler sugar.  If the seasoning is not enough add in a little fish sauce. 
6.      At the end add in the Thai basil and served it with some white rice.  Enjoy…

Bacon, Asparagus, Cherry Tomato, Basil, Fettuccine With Spicy White Wine Sauce

The passed Sunday afternoon (Oct 27 2013), I made this for lunch and my hubby loves it.  Here’s how you make it….


Ingredient

Bacon
Asparagus
Cherry Tomato
Basil
Fettuccine
Garlic
Chili Pepper

Seasoning

Salt
Pepper
Chicken Broth
White Wine

Method

1.      In a large pot, add in water, filled it up half way full.  Bring the water up to a boil, add in salt and fettuccine.  Cook the fettuccine one minute less then the package instruction.
2.      Chop the bacon up into small pieces, then cook it in a skillet.  Do not add oil into the skillet because bacon has lot of fat.  When the bacon starting to turn brown, dish it up on the plate.
3.      In a large skillet with high side, add in one tablespoon of olive oil.
4.      Add in the garlic and chili pepper and cook it for 1min.
5.      Then add in the asparagus season it with salt and pepper and cook for 1min
6.      Add in a 1/4 cup of white wine, let the wine reduce by half then add in the cherry tomato.
7.      After cooking the cherry tomato for 2-3mins, add in the bacon, fettuccine and 1/4 cup of chicken broth, season with a little salt and pepper.  Cook for another 2-3mins.
8.      At the end grated in some parmesan cheese and served…. Enjoy!!!!

Steam Beef With Spicy Vegetable

This is not only an easy dish to make for dinner but is also very good with white rice.  Here’s how you make it…..


Ingredient

Sirloin Steak
Spicy Vegetable

Seasoning

Soy Sauce
Sesame Oil
White Pepper
Corn Starch
Sugar
Chicken Sauce

Method

1.      Slice up the sirloin steak, put it in a bowl and mix in all the seasoning.  Marinate the beef for 20-25mins.
2.      Add the spicy vegetable into the beef and combine everything well.  Put the beef in a plate.
3.      Steam the beef over high heat for 12mins.  Served it with white rice and enjoy.

Steam Fish Cake With Japanese Tofu

This is a very easy and healthy recipe.  After our trip to Thailand, my hubby requested to eat healthy and light.  Here’s how you make this simple, easy and healthy dish….


Ingredient

Fish Cake
Japanese Tofu
Green Onion

Seasoning

Oyster Sauce
Fish Sauce
Sesame Oil
White Pepper
Corn Starch

Method

1.      In a large mixing bowl put the fish cake and all the seasoning in, mix everything in one direction for at least 5mins.
2.      Diced up the green onion into small pieces, add half of the green onion in the fish cake mixture.
3.      Diced up the Japanese tofu and mix in with the fish cake until everything is well combine.
4.      On high heat, steam the fish cake for 10 mins, sprinkle the remaining green onion on top and served it with some white rice.

Day Seven Bangkok, Thailand (Oct 15 2013)

Today is our last day in Thailand.  Woke up at around 10 something in the morning, freshen up and went out for lunch.  Since I was still not feeling too well, we just want down to the mall right next to our hotel to have lunch. Here’s what we ate for our last lunch in Bangkok……









After lunch we went to Swensen for a mango drink, here’s a photo of it…..


After our mango drink at Swensen, we went to Big C supermarket again to pick up some Thai style seasoning.  After that we went for a foot massage again.  Our last Thai style foot massage before heading home.  After our massage, we went back to the hotel, pick up our bags and head out to to the airport. 

Since our flight was at 8p.m., we ate dinner at the airport before heading back home, here’s what we ate for dinner….












Over all this trip was so memorable for both my hubby and I.  We had such a great time there, although I was sick on the fourth day of our trip.  But over all we both think this trip was excellent.  We just love spending every second with each other that once I got back from Thailand, I have already start planning our next trip to Malaysia (Sabah).  We will be going there on April 2-7 2014 for six days and 5 nights.  Yeah I can’t wait for our next Malaysia journey…..


Day Six Bangkok, Thailand (Oct 14 2013)

One more day and we will be heading home.  Today I still didn’t feel too well in the stomach.  I feel like my whole body is aching and tired.  But I still manage to walk to Central World to have lunch with my hubby and did a little shopping at Central World and Big C Super Market.  Here are some photos of what we ate and bought….











After shopping and eating, we went to have Thai body massage.  To me I prefer foot massage more than body massage.  But my hubby love body massages more.  After one hour of body massage, we had an early dinner at KFC and dessert at Swensen.  Here are some photos of what we ate…..






Since we ate dinner kind of early, we decided to buy some snack back to the hotel and eat, just in case we get hungry later on at night.  Here’s what we bought as our snack….



Day Five In Hua Hin & Bangkok, Thailand (Oct 13 2013)

Today will be our last day at Hua Hin, I have schedule the pickup service at 12 in the afternoon.  Although the night before I wasn’t feeling too well but over all I had a great time here at Hua Hin.  Love the atmosphere here, so relax and laid back.  One day in the future, I will for sure come back to Hua Hin again……

In the morning we got up early to have our last sun tanning at our private moon deck.  After taking a tan for 30mins we shower and head down to the restaurant for our last breakfast at Hua Hin.  Here’s what we had for our last day at Hua Hin…..










After breakfast, we went back to the room, pack up and rest a while before heading back to Bangkok.  The ride from Hua Hin to Bangkok was sooooo long.  This time it took us a little more than 4 hours to get back to Bangkok.  Once we arrived, we checked in first and then went to Central World to eat and shop.  Also we went to Big C supermarket.  Here are some photos of what we bought and ate…..














After shopping and eating my hubby and I went to have Thai foot massage again.  Then we bought some snack and beer back to our hotel room for some mid night snacking.  Here are some photos of our snack…..
