Steam Glutinous Rice With Chicken Wrap In Lotus Leaf

I made this dish for last week Sunday (17-11-2013) for my hubby upcoming week breakfast.  Making this required a lot of steps but to me I think is all worth it because my hubby really enjoys eating it.



Ingredient

1 LB Glutinous Rice
1/2 Chicken (Choped)
12 Mushroom
2 Chinese Sausage
3 Lotus Leaf

Seasoning For Chicken

White Pepper (Little)
Chinese Cooking Wine (1/2 teaspoon)
Soy Sauce (1 tablespoon)
Sugar (1/4 teaspoon)
Chicken Powder (1/2 teaspoon)

Seasoning For The Rice

Chicken Powder (1 tablespoon)
Soy Sauce (1 tablespoon)
Little Oil (1/2 teaspoon)

Seasoning For The Sauce

Light Soy Sauce (1 tablespoon)
Dark Soy Sauce (1/2 tablespoon)
Sugar (1/2 teaspoon)
Chicken Powder (1 tablespoon)
Oyster Sauce (1 tablespoon)
Sesame Oil (little)
Water (1 cup)

Method

1.      Wash the glutinous rice 3-4 times in running water, then soak the rice for 2-3hours.
2.      Season the chicken with the seasoning listed above for at least 30mins.
3.      Diced up the mushroom and Chinese sausage
4.      In a steamer over high heat, steam the glutinous rice for 20-25mins.  In the meantime every 10mins stir the rice around and splash a little of water on top of the rice. After 20-25mins, removed the rice from the steamer and let it cool before wrapping it with the lotus leaf.
5.      In a non stick wok, add in the chicken and cook it until the chicken is 80% done.
6.      Then add in the diced mushroom and Chinese sausage with the chicken and cook for another 4-5mins.
7.      Add in the sauce and cook for another 3-4mins.  At last thicken the sauce with a little corn starch water.
8.      Place the rice in the middle of the lotus leaf, add in two pieces of chicken and on top of the chicken add more rice then wrap it up. 
9.      Steam the wrap up glutinous rice with chicken in a steamer for 15mins, dish up and enjoy!!!

Stir-fry Ground Pork With Sweet Thai Basil Sauce

I made this dish for last week Saturday (16-11-2013) dinner.  That day my hubby and I had a very relaxing day all to ourselves.  We didn’t go anywhere, we just stay home, watched some movies, drank a bottle of white wine and just sit back & relax.  For dinner I just made whatever I can find in the fridge.  This is a very simple dish to make, the season is straight out from a package. 



Ingredient

Pork
Onion
String Beans
Diced Garlic
Eggs

Seasoning For Pork

White Pepper
Chinese Cooking Wine
Soy Sauce
Fish Sauce
Sugar

Seasoning For The Dish

Chili Powder
Fish Sauce
Lemon Juice

Method

1.      Wash the pork, pat it dry and chop the pork into paste like texture.  Season the ground pork with the seasoning listed above.
2.      In a nonstick skillet with high side, on medium high heat, heat up 1/2 tablespoon of oil, add the garlic let it cook for 1min, then add in the ground pork and let cook it for 2-3mins.
3.      Then add in the onion and let it cook for 2-3mins then add in the string beans and the Thai Sweet Basil Seasoning Package.  Let everything cook for another 2-3mins.
4.      Taste the dish, if it needs more seasoning then add in more fish sauce and lemon juice.  Since my hubby and I love to eat spicy food, I added in a little more chili powder.  Dish up and sever with it white rice and a sunny side up egg.  Enjoy…

Seafood Fried Rice

I made this dish for last week Saturday (16-11-2013) lunch.  I was planning to make fried rice for Friday’s dinner but my hubby friends ask us to go out to dinner.  So that’s why the next day I made fried rice for lunch because I didn’t want to waste the left over rice.


Ingredient

Shrimp
Scallop
Chinese Broccoli
Ham
Corn
3 Eggs

Seasoning For Shrimp & Scallop

White Pepper
Sesame Oil
Little Salt

Seasoning For Fried Rice

Pork Powder
Fish Sauce

Method

1.      Wash the shrimp with salt, pat it dry and cut it in two.  Season the shrimp with a little white pepper, salt and sesame oil
2.      Wash the scallop and pat it dry. Season it with a little white pepper, salt and sesame oil.
3.      Cut the ham into small pieces.
4.      For the Chinese broccoli remove all the leaf and cut the stem into small pieces.
5.      Put the eggs in a mixing bowl and whisk it until the egg white and egg yolk is all combine.
6.      In a non-stick skillet, over medium high heat, cook the shrimp and scallop until they are 80% cooked.
7.      In a medium size pot, heat up a pot of water, boil the Chinese broccoli for 30 second, drain the broccoli and set it aside.
8.      In a wok, over medium high heat, heat up one tablespoon of oil, add in the eggs and right away add in the rice.  Keep mixing the eggs and rice together until the rice is all coated with the eggs (this process will take around 2-3mins).
9.      Add in the diced ham, cook for 2-3 mins (remember to keeping mixing the fried rice at all time), then add in the corn, Chinese broccoli, shrimp and scallop.  Cook everything for another 2-3 mins.  Then season the fried rice with some fish sauce and pork powder.  Served up and enjoy!!!

Steam Pork Ribs With Black Bean Sauce

I made this dish for last night dinner (13 Nov 2013).  It is one of my hubby favorite dish.  As for me, I don’t really like steam food, I don’t know why, I just don’t like it.  This is also a very easy dish to make, here’s how you make it….


Ingredient

Pork Ribs
Garlic
Black Beans
Red Chili Pepper

Seasoning For Pork Ribs

Soy Sauce
Sugar
Corn Starch
Oil
Chinese Cooking Wine

Seasoning For The Black Bean Sauce

Sugar
Chicken Powder

Method

1.      Wash the pork ribs pat it dry and season it with the seasoning listed above.  Season the ribs for 30mins.
2.      Wash the black bean for at least 4-5 times.
3.      In a small sauce pan, heat up 1 tablespoon of oil; add in the chop garlic, black beans and the seasoning list above.  Cook for 1-2min or until you can smell the garlic and black beans.
4.      Add the black beans mixture and 1 red chili with the pork ribs, combine everything well and put it on a plate.
5.      Steam it over high heat for 15mins.  Sever it with some white rice and enjoy.

Stir-Fry String Beans with Ground Pork with Salty Olives

I made this dish for last night dinner (13 Nov 2013).  Is another simple and easy dish to make.  Goes very good with white rice.  Not only this dish is good but it is also very healthy!!!!  Here's how you make this yummy and healthy dish....



Ingredient

String Beans
Ground Pork
Chop Garlic
Salty Olive

Seasoning

Soy Sauce
Pork Powder
Sugar

Seasoning For Ground Pork

Fish Sauce
Sugar
Soy Sauce
Chinese Cooking Wine
White Pepper

Method

1.      In a non stick wok over medium high heat; heat up 1/2 tablespoon of oil.  Add in the chop garlic cook for a min.
2.      Add in the ground pork, when the ground pork if half way cook, add in the string beans and cook for 4-5mins.
3.      Add in 2 tablespoon of the salty olive, cook for another min or two.
4.      At the end season the string beans with some fish sauce, pork powder and sugar.  Dish up and serve it with some white rice.
